Whereas an unprecedented crisis is currently taking place in the European dairy sector, the Comté cheese-making industry has managed to avoid it. In this branch, the price of milk is set at a fair level, and all those who operate in the sector invest in it thereby perpetuating a virtuous circle of sustainable growth. In less than thirty years, Comté cheese has more than doubled in production, reaching a total of 65,000 tonnes, and it has done this by sharing the benefits throughout its sector. As a result, the industry has been able to provide consumers with an excellent product, revitalising rural areas by maintaining employment, preserving its know-how, and protecting the environment. The reasons for its success have been respecting strict rules regarding the conditions of production; perfect monitoring and control of the quantities commercialised; and an ambitious group communications policy. This implies, on the part of those involved in this industry, strong commitment to work together for the common good in a long-term perspective. What skilful chemistry!
