Tannin content, acidity and maturity... When a sommelier tastes a wine, he has a professional approach which consists of putting the wine into categories. Sometimes he may surprise himself. Each creative process depends on a balance between an artistic, passionate, intuitive, and a business-like logic. This delicate balance is being threatened by the arrival of mass consumption and luxury goods. On the one hand, there are important wine producers who buy large wine domains, and on the other there are large groups which have the resources to buy real gems. The former try to standardise production in order to make it mundane, and the latter attempt to promote well-known names while reducing risks specific to the wine sector. Standardisation, codification, promotion : can the unusual and exceptional wines withstand the economic reality which is sweeping the wine sector ?
